Carrot, Orange and Raisin Cupcakes

    A dense, yet delightful mix of the sweet and savoury flavours. The carrot and raisins are favourites with my kids, though mine also prefer their cupcakes without any icing, unlike me who lavishes the top with cream cheese icing!

    Makes: 12 cupcakes

    • 1 3/4 cups wholemeal flour
    • 125g margarine
    • 1/2 cup soft brown sugar
    • 1 cup raisins
    • 2 eggs, beaten
    • 2 tablespoons honey
    • 2 small carrots, finely grated
    • 1 orange, zested and juiced

    1. Preheat oven to 180 degrees C. Prepare a cupcake or muffin tray with 12 cupcake cases.
    2. Mix the wholemeal flour and margarine together with your hands until it resembles bread crumbs. Mix through the brown sugar and raisins.
    3. Stir through the eggs and honey, before adding in the carrot and orange. Spoon mixture into cupcake cases and bake for 15 minutes.
