Chicken and Avocado Salad

    This is a super tasty and healthy salad that makes a fantastic lunch for one or to serve to guests.

    Serves: 1 

    • 1 large chicken breast
    • 1/4 teaspoon sea salt
    • 1/8 teaspoon black pepper
    • 1/2 avocado, diced
    • 7 baby carrots, sliced julienne style (long and thin)
    • 1/2 red capsicum, diced
    • 2 spring onions
    • 2 tablespoons fresh parsley, chopped
    • 6 pitted black olives, roughly chopped
    • 2 tablespoons Italian salad dressing
    • sprinkling freshly grated parmesan

    1. Season chicken breast with sea salt, garlic, black pepper. Grill and then cut into 1cm cubes.
    2. In a large bowl gently combine all ingredients. Serve.

    Make ahead

    Prepare your chicken breasts the day before and keep in the fridge to speed up the 'on the day' preparation time. This is also a good recipe to use up leftover chicken.
