An old fashioned ginger cake.

Serves: 4 

  • 2 cups wholemeal flower
  • 1/4 cup demerara sugar
  • 110g butter
  • 2 tablespoons syrup
  • 1 -2 tablespoons (rounded) ginger
  • 1 tablespoon bicarb soda
  • pinch of salt
  • 1 egg beaten with a little milk

Preparation:30min  ›  Cook:30min  ›  Ready in:1hour 

  1. Place dry ingredients together. Melt butter and syrup over gentle heat, add to mixing bowl. Add sufficient egg and milk mixture to produce a dropping consistencey. Bake in a greased tin lined with greaseproof paper in a moderate oven. If stored for a few days before cutting, the flavour improves.
