Heat the oven to 200 degrees C fan forced. Cut each beetroot into 4-6 wedges and arrange in a large roasting tin. Mix together the remaining ingredients and pour over the beetroot. Season well, and toss together so all the beetroot is thoroughly coated in the dressing. Roast for 25 mins until the beetroot is sticky and glazed.
these were so yummy, definately make sure your beetroot is cooked i only microwaved mine for 5 min prior to adding the sauce and baking so were still a little crunchy but the flavour was beautiful everyone at dinner told me they were great and asked for the recipe.
