Vegetarian Chilli

    This is a spicy vegetarian chilli, packed full of protein with black beans and TVP (textured vegetable protein). TVP is a delicious mince substitute for vegetarians and is available at most supermarkets. Tinned black beans can be found at Asian supermarkets or some small organic stores. Serve the chilli with rice or polenta.

    Serves: 6 

    • 1 red onion
    • 4 cloves garlic, crushed
    • 1 tablespoon olive oil
    • 2 (400g) tins diced tomatoes
    • 1 cup (250ml) water
    • 2 teaspoons Cajun seasoning
    • 1 1/2 cups cooked black beans
    • 1 1/2 cups prepared TVP
    • 1 teaspoon hot chilli powder

    1. In a large saucepan, saute the onion and garlic in olive oil until the garlic is translucent.
    2. Add the diced tomatoes and 1 cup of water.
    3. Add the Cajun seasoning, black beans, TVP and chilli powder. Simmer for about 45 minutes.

    This is a great, easy vegetarian recipe. You can make a large batch and freeze for another meal. It tastes even better the next day once the flavours really infuse.  -  08 Jun 2012
