Easy Meringues

    These basic meringues made with fresh egg whites, sugar, cornflour and vanilla are light, airy and delicious.

    Serves: 4 

    • 5 (very fresh) egg whites
    • 250g icing sugar
    • 1 tablespoon caster sugar
    • few drops vanilla essence
    • 1 tablespoon cornflour

    Preparation:30min  ›  Cook:1hour30min  ›  Ready in:2hours 

    1. Preheat the oven to 120 degrees C. Line two baking trays with baking paper.
    2. In a clean and dry bowl, whisk the egg whites until stiff. Gradually add the icing sugar, caster sugar, vanilla and cornflour. Whisk again until shiny and smooth.
    3. Spoon teaspoon-sized dollops of meringue onto the lined baking trays.
    4. Bake in the oven for 90 minutes. Remove and leave to cool before serving.
