5 (very fresh) egg whites
250g icing sugar
1 tablespoon caster sugar
few drops vanilla essence
1 tablespoon cornflour
- Preheat the oven to 120 degrees C. Line two baking trays with baking paper.
- In a clean and dry bowl, whisk the egg whites until stiff. Gradually add the icing sugar, caster sugar, vanilla and cornflour. Whisk again until shiny and smooth.
- Spoon teaspoon-sized dollops of meringue onto the lined baking trays.
- Bake in the oven for 90 minutes. Remove and leave to cool before serving.
