    This easy pork schnitzel is crumbed with flour, salt, pepper, breadcrumbs then fried in vegetable oil until golden. Enjoy with your favourite gravy. Yum.

    Serves: 4 

    • 4 thin pork chops (roughly 1 1/4 cm thick)
    • 1 1/2 cups flour
    • 1 cup dry breadcrumbs
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 2 eggs
    • 2 tablespoons milk
    • about 1/2 cup vegetable oil

    1. Mix flour, salt and pepper. Pour the mixture onto a large plate. Pour the breadcrumbs onto another plate. In a bowl, combine the eggs and milk. Pour enough vegetable oil to cover the bottom of a frying pan into a frying pan over high heat.
    2. Remove any visible fat from the pork chops. One at a time, dust with flour mixture, coat with egg mixture then cover with breadcrumbs. Set aside. Turn frying pan to medium-high heat then add chops. Fry for about 5 minutes per side or until golden and juices run clear.
    3. Remove from frying pan then drain and blot with paper towels. Serve with gravy.
