Ingredients

Serves: 4
  • 370g rice
  • 4 carrots
  • 1 kg beef or lamb on the bone
  • 1 onion
  • 1/2 cup (120ml) olive oil
  • 2 teaspoons cumin
  • 2 fresh whole chillies
  • head of garlic (optional)
  • salt to taste

Preparation method

Prep: 15 minutes | Cook: 1 hour
1.
Rinse the rice, and set aside in warm water. Peel the carrots and cut into matchsticks. Remove the meat from the bones and cut into cubes. Slice the onion into half circles.
2.
Heat the oil in a saucepan and fry the bones until lightly browned. Remove and set aside.
3.
Add the onions to the pan and cook five minutes, then add the beef and cook until browned on all sides. Return the bones to the pan and stir in the carrots. Sprinkle with cumin.
4.
Add the whole chillies and the optional head of garlic (unpeeled) to the pan and stir in. Add salt to taste and top with hot water to cover. Bring to a boil then reduce heat and simmer 35-40 minutes.
5.
Remove the bones and top with a layer of rice. Add 450ml hot water and smooth the rice out, but do not stir! Cover and cook on low a further 20-25 minutes. Stir well and serve.
