    Biryani is a rice based dish which can have meat as well as be vegetarian. The pressure cooker makes it super quick to prepare.

    Ingredients
    Serves: 4 

    • 5 tablespoons vegetable oil
    • 1 sprig curry leaves (optional)
    • 4 onions, sliced
    • 2 tomatoes, chopped
    • 1 cup green beans, julienned
    • 1 cup carrots, julienned
    • 1/2 cup fresh green peas
    • 1 cup potatoes, julienned
    • 2 cups basmati rice, soaked for 10 mins
    • 2 teaspoons chilli powder
    • 1/2 teaspoon garum masala
    • 4 cups water
    • salt to taste
    • 1 cup chopped coriander leaves

    1. Heat vegetable oil in a fry pan, add curry leaves (if using) and onions and fry until onions are browning. Add the tomatoes and cook until the tomatoes are soft.
    2. Add the rest of the vegetables, the soaked rice, the chilli powder, garum masala, water and salt to taste. Mix well. Transfer to a pressure cooker and cook on high pressure for ten minutes. Release pressure manually. Mix and serve, sprinkled with coriander. Serve with raita.
