Heat vegetable oil in a fry pan, add curry leaves (if using) and onions and fry until onions are browning. Add the tomatoes and cook until the tomatoes are soft.
Add the rest of the vegetables, the soaked rice, the chilli powder, garum masala, water and salt to taste. Mix well. Transfer to a pressure cooker and cook on high pressure for ten minutes. Release pressure manually. Mix and serve, sprinkled with coriander. Serve with raita.
