Spicy Stuffed Mackerel

    Mackerel stuffed with onions, chillies and coriander and pan fried. Also works well grilled on the barbecue.

    Serves: 4 

    • 4 fresh mackerel
    • 2 onions
    • 2 - 3 green chillies
    • handful of coriander leaves
    • 1/2 teaspoon pepper
    • 1 lime
    • 2 tablespoons oil

    1. Clean and wash the fish. Apply salt generously and set aside.
    2. Chop the onions, chillies and coriander leaves very finely and mix them all together in a bowl. Add in a pinch of salt and pepper and squeeze in juice of 1/2 a lime.
    3. Stuff the fish with the onion mixture and tie closed with string. Let sit 15 minutes.
    4. Heat oil in a cast iron skillet and fry fish on both sides, turning only once, until fish is cooked. Remove the string and squeeze the remaining 1/2 lime over the fish before serving.
