Stir Fried Chilli Chicken

    This spicy dinner comes together in less than 30 minutes which makes it perfect for the middle of the week. Serve over hot rice.

    Serves: 2 

    • 2 skinless, boneless chicken breast fillets, diced
    • 3 teaspoons mild chilli powder
    • salt and freshly ground black pepper to taste
    • 1 tablespoon olive oil
    • 1 green capsicum, seeds removed and chopped
    • 1 small onion, peeled and chopped
    • 1 or 2 green chillies, seeded and finely chopped
    • 1 large tomato, cut into chunks
    • 10 drops Tabasco sauce

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Season chicken with 1 teaspoon chilli powder, salt and pepper.
    2. Heat oil in a large frying pan or wok over medium high heat and stir-fry seasoned chicken for 3 to 4 minutes, or until tender. Remove from frying pan with a slotted spoon and keep warm.
    3. In same frying pan, stir fry green capsicum and onion until softened. Add chillies, tomatoes, Tabasco and remaining chilli powder.
    4. Stir-fry for an additional 3 to 5 minutes; add chicken and stir-fry further 2 minutes. Serve with cooked rice.

    Altered ingredient amounts. Added basil and coriander leaves in the end to make it aromatic. Will do again....really easy  -  04 Mar 2010


    Used different ingredients. This was GREAT! It took a little while to do but well worth the time. I added garlic and sour cream. The sour cream is a must. It made a delicious rich sauce. Without it dish was a little dry. Thought I made enough for leftovers, -- wrong, all gone!  -  29 Sep 2008
