These cookies are called 'kulkuls' in India and are a sweet treat made at Christmas. In India they use a special form to make them but you can do it with a fork for ease.

Serves: 10

  • 2 cups flour
  • 1 cup semolina
  • 2 egg yolks
  • 1/2 cup sugar
  • 1 tablespoon butter
  • coconut milk, about 1/2 cup
  • oil, for deep frying

  1. Cream together the flour, semolina, egg yolks, sugar and butter with a wooden spoon, then, adding coconut milk as needed (not too much), knead to form a stiff dough. Cover with a cloth or plastic wrap and let stand for at least 1 hour.
  2. Form the dough into small (about 3cm) balls. Using a greased fork, roll the balls into tiny logs leaving a pattern on them. Deep fry in hot oil until they are lightly brown, about 5 minutes.
