    This is a vegetarian curry recipe which uses hard boiled eggs as the protein source. It's easy to make and full of flavour. Best eaten over hot white rice.

    Serves: 4 

    • 2 tablespoons vegetable oil
    • 1 onion, sliced
    • 1 teaspoon garlic paste
    • 1/2 teaspoon ginger paste
    • 1/4 teaspoon pepper
    • 1 tablespoon powdered coriander
    • 1 teaspoon powdered cumin
    • 1/2 teaspoon powdered turmeric
    • 1/2 teaspoon chilli powder
    • 1/4 cup tomato puree
    • about 1 1/4 cups water
    • salt, to taste
    • 1 tablespoon vinegar
    • 4 hard boiled eggs, peeled and halved
    • coriander leaves, to garnish

    1. Heat 2 tablespoons oil in a saucepan, add the onion and fry. When softened, add the ginger paste and garlic paste. Add the spices mix well. Add the tomato puree and mix well.
    2. Add water to make a thick sauce and bring to a boil. Add salt and vinegar. Slip in the hard boiled eggs and cook for another 5 minutes. Garnish with coriander leaves.
