Nut croutons


    Use these like bread croutons for topping crisp green salads or in soup. I like to use a combination of almonds and cashews. For the best flavour make sure you roast the nuts.

    Serves: 4 

    • 125g ground roasted mixed nuts
    • 125g dried breadcrumbs
    • 1 tablespoon extra virgin olive oil
    • 60g tomato puree
    • 1 teaspoon chilli sauce e.g Tabasco
    • 1 tablespoon thinly sliced spring onion
    • 2 tablespoons minced flat leaf parsley

    1. In a medium bowl, mix ground nuts and breadcrumbs. Stir in olive oil, tomato puree and hot sauce. Add minced spring onion and parsley. Mix well.
    2. Using your hands, form the mixture into bite-size balls. Refrigerate until ready to use.
