Cumin Fried Baby Corn

    A baby corn recipe which makes a great side dish for an Indian meal. Baby corn is briefly boiled then fried with cumin to create a crispy treat.

    Serves: 4 

    • 20 cobs baby corn
    • 1-2 tablespoons vegetable oil
    • 1 teaspoon cumin seeds
    • 2 teaspoons chilli powder
    • 1 teaspoon ground cumin
    • salt, to taste

    1. Cut the baby corn cobs in half or leave whole as you prefer. Cook them in boiling water until just tender. Drain.
    2. In a frypan, heat the vegetable oil and when hot add the cumin seeds. When they begin to splutter, add the cooked baby corn, chilli powder and ground cumin then lightly fry for 10 minutes or until crispy. Serve hot.
