Indian Mackerel Curry

    This is a very tasty Indian fish curry called ayila meen curry. It makes use of tinned mackerel which is a strong tasting and oily fish. One for the seafood lovers!

    Serves: 2 

    • 1 cup shredded coconut
    • 1/4 teaspoon powdered turmeric
    • 1 teaspoon chilli powder
    • 1 1/2 teaspoon powdered coriander
    • 2 tablespoons vegetable oil
    • 1/2 tablespoon mustard seeds
    • 1 teaspoon fenugreek seeds
    • 1 medium onion
    • 1 small tomato
    • 2 green chillies
    • 1 tablespoon tamarind juice
    • 500g tinned mackerel fillets
    • 1/4 teaspoon salt
    • 2 sprigs curry leaves

    1. In a food processor or mortar and pestle, grind the coconut along with turmeric, chilli powder and coriander into a smooth paste.
    2. Heat oil in a saucepan and add mustard seeds. When they splutter add the fenugreek seeds.
    3. Add the onions and saute. When they start to brown, add the green chillies and the tomatoes.
    4. Add the coconut paste and mix well. Add the tamarind juice, then add the tinned mackerel and salt and mix well. Add 1/2 cup of water. Add the curry leaves, cover and simmer 15-20 minutes.
