    Indian bread layered with mashed potato and broccoli is not only delicious but a good way to get some vegies into the kids!

    Ingredients
    Makes: 9 

    • 2 potatoes
    • 2 cups plain flour
    • 1 cup water
    • salt to taste
    • 1 small onion, minced
    • 2cm ginger, minced
    • 1 cup brocolli, finely chopped
    • 1 teaspoon red chilli pepper
    • vegetable oil

    Directions

    1. Boil the potatoes until soft.
    2. While the potatoes are boiling, knead the flour with water and salt.
    3. Roll the dough into 9 equally-sized balls and set aside.
    4. Mash the potatoes, add onion, ginger, brocolli and chilli pepper.
    5. Roll the potato mixture into 9 medium sized balls and set aside as shown in the picture.
    6. Lightly coat a dough ball with white flour.
    7. With a rolling pin flatten out the dough ball and place a potato ball on it, then wrap the potato ball up.
    8. Lightly dip the ball in the white flour and flatten it out with a rolling pin.
    9. Heat a frying pan for 1 minute.
    10. Cook each side for 1 minute each. After both sides are done add 1 - 2 drops of oil on both sides and let it cook for 1 more minute. Dab a little butter on top of the bread. Repeat with remaining balls.
    11. Serve with plain yoghurt and mango pickle.

    tip

    You can make the parathas a few hours ahead and reheat in the oil just before serving.
