In a large bowl, sift together the flours, salt and sugar. Create a well in the centre and add the beaten eggs and a little of the milk. Mix with a wooden spoon in gentle circles, until all the ingredients are combined. Slowly adding the remaining milk. Stir in the orange zest and oil then cover with cling wrap and rest for 30 minutes.
Meanwhile, heat the granulated sugar in a dry frying pan until it turns golden brown. Turn off the heat and stir in the butter to make the caramel sauce. Stir in the apples and cinnamon, cover and simmer over a low heat for 20 minutes, or until apples are tender. Cover and set aside, keeping it warm.
Cooking the Crepes
Remember that crepes are super thin, so ensure the pan is HOT before adding the batter. Swirl the batter around the base of the pan to lightly cover it. Each crepe should take about 30-40 second on each side.
Top each crepe with a spoonful of apple and caramel sauce, and loosely fold the crepe. Then Enjoy!
