Korean Surimi and Vegetable Skewers

    These delicious little snacks are a Korean recipe called yachae sanjuk - vegetables and imitation crab arranged on toothpicks and lightly fried.

    Serves: 4 

    • 2 pine mushrooms
    • 10 green beans
    • 1 yellow capsicum
    • 2 medium carrots
    • 10 spring onions (white part only)
    • 10 imitation crab sticks (surimi)
    • 20 toothpicks
    • 1/2 cup plain flour
    • 3 eggs
    • 1/2 teaspoon salt

    1. Cut the vegetables into 4cm lengths.
    2. Arrange the mushrooms, green beans, yellow capsicum, carrot, spring onion and imitation crab sticks on toothpicks. Sprinkle lightly with salt.
    3. Beat the eggs with 1/2 teaspoon salt. Lightly dust the skewers with flour, then dip in the beaten egg. Pan fry them until lightly brown.
    4. Serve with soy sauce for dipping.
