    A very easy stir fry prawns recipe which is packed with flavour! Add a little more chilli if you like it hot.

    Ingredients
    Serves: 8 

    • 600g medium prawns, deveined
    • 1 tablespoon turmeric powder
    • 2 teaspoon coriander powder
    • 1 teaspoon fennel powder
    • 1/2 teaspoon cumin powder
    • 1/2 teaspoon chilli powder
    • salt and pepper to taste
    • 2 cloves garlic
    • 4 shallots
    • oil for cooking
    • 2 stalks curry leaves

    1. Leaving the shells on, slit the back of the prawns and devein. Rinse and put in a bowl with turmeric, coriander, fennel, cumin, chilli powder, salt and pepper. Mix and leave to marinate for a few minutes.
    2. In mortar and pestle (or blender) pound the garlic and shallots until fine.
    3. Heat a little oil in pan until hot. Add the curry leaves and stir-fry for about 2 minutes. Add the pounded garlic and shallots and stir-fry until fragrant. Put in the prawns, stir and cook until just done. Taste for seasoning and serve hot.

    Tip

    Instead of measuring the individual spices, you may also use pre-packaged fish curry powder that's available.
