Stir Fried Chokos and Quail Eggs

    A very healthy stir fry with a great combination of flavours and textures. Use those chokos growing on the back fence!

    Serves: 10 

    • 2 teaspoons butter
    • 1 medium sized onion, diced
    • 5 cloves garlic, minced
    • 1 small choko, chopped
    • 1 medium sized carrot, chopped
    • 200g frozen corn
    • 2 teaspoons cornflour
    • 1 cup water
    • salt to taste
    • pepper to taste
    • 12 hard boiled quail eggs
    • 1 cup toasted cashews

    1. Melt butter in a wok. Saute onion and garlic until fragrant.
    2. Add in choko and carrot and stir-fry until tender. Add in corn and cornflour mixed in water. Cook for 2 - 3 minutes.
    3. Season with salt and pepper. Add in hard boiled quail eggs and cashews. Mix well for 1 minute. Serve.
