Fried plantains are an accompaniment to many South Pacific and Caribbean dishes. They are very similar to bananas.

Serves: 2 

  • 1 ripe plantain
  • peanut oil for frying

Directions
Preparation:2min  ›  Cook:5min  ›  Ready in:7min 

  1. Heat peanut oil in a frypan over a moderate heat.
  2. Peel and cut the plantain into 1/2 cm slices, cutting diagonally across the fruit.
  3. Fry until golden on each side, serve whilst still warm.
