Apple Yoghurt Dessert

    I made this up when I had friends over for dinner then realised that I had forgotten about dessert. It was quick, easy and my guests enjoyed it!

    Serves: 4 

    • 2 Granny Smith apples
    • 1 1/2 cups apple-mango juice
    • 2cm ginger, sliced
    • 2 tablespoons honey
    • passionfruit yoghurt (or whatever yoghurt you have)
    • 1/2 cup walnuts, chopped

    1. Peel and cut the apple into medium sized chunks. Put in a saucepan with the juice, honey and sliced ginger and cook until slightly soft, but not mushy.
    2. Remove from heat, take out the ginger slices and spoon the apples into small serving bowls or cups. Chill in refrigerator.
    3. Just before serving, put dollops of yoghurt onto the apples and top with chopped walnuts.
