    You can find dried squid and lotus root at Chinese markets and then you can make this delicious soup with tender pork.

    Serves: 6 

    • 2 threads dried squid
    • 100g raw peanuts
    • 1 small lotus root
    • 500g pork spare ribs, cut into pieces
    • 15 Chinese red dates
    • salt to taste
    • soy sauce
    • white pepper

    1. Soak the dried squid and peanuts separately in bowls of water for about 1 hour.
    2. Peel the lotus root and slice to medium thickness.
    3. Drain the soaked ingredients and put all ingredients except seasonings into a soup pot. Cover with water and cook on medium heat for 2 1/2 hours.
    4. Add salt at the end of cooking time. Serve soup in bowl and have soy sauce and white pepper as additional condiments on the side.
