    This is the classic Vietnamese dipping sauce called Nuoc cham, often used with spring rolls or other fried foods. It doesn't keep well, so make it fresh every day.

    Serves: 4 

    • 2-3 tablespoons fish sauce
    • juice of 1 lime (about 3 tablespoons)
    • 1/2 water
    • 2-3 tablespoons white sugar
    • 1-2 Thai chilis, finely sliced (optional)
    • 1 garlic clove, finely sliced (optional)

    1. Mix all the ingredients well. The sauce should taste balanced, not too sweet, sour or salty.
