Vietnamese Dipping Sauce (Nuoc Cham)

    This is the classic Vietnamese dipping sauce called Nuoc cham, often used with spring rolls or other fried foods. It doesn't keep well, so make it fresh every day.

    Serves: 4 

    • 2-3 tablespoons fish sauce
    • juice of 1 lime (about 3 tablespoons)
    • 1/2 water
    • 2-3 tablespoons white sugar
    • 1-2 Thai chilis, finely sliced (optional)
    • 1 garlic clove, finely sliced (optional)

    1. Mix all the ingredients well. The sauce should taste balanced, not too sweet, sour or salty.

    he lime juice over powered the dish. The red chili was optional and I didn't have any on hand so I used chili flakes instead. If you cut back on the lime I think this would be delicious but as written it was just okay.  -  25 Jan 2016  (Review from Allrecipes USA and Canada)
