Stir Fried Pork and Noodles

    This dish has simple flavours and lots of them, perfect for the whole family. If you can find them, use lo shi fun noodles, which are also called teardrop noodles. They are thick and stubby.

    Serves: 6 

    • 500g rice noodles, broken into small pieces
    • 2 garlic cloves, minced
    • 350g minced pork
    • 1 teaspoon oyster sauce
    • 2 teaspoons light soy sauce
    • 1 teaspoon Chinese cooking wine
    • 2 stalks Chinese cabbage, sliced
    • 2 eggs, beaten
    • salt and white pepper to taste
    • fried shallots for garnishing
    • oil for cooking

    1. Blanch the noodles in hot water until soft, drain and set aside.
    2. Heat 1 tablespoon oil in a wok, saute minced garlic and pork together. Add the oyster sauce, soy sauce, cooking wine and stir-fry. Add the Chinese cabbage and stir-fry for about 2 minutes then add the noodles.
    3. Pour the beaten eggs in and stir-fry all the ingredients together until egg is cooked. Season with salt and pepper. Serve and garnish with fried shallots.
