Indonesian Fish Curry (Ikan Pesmol)

    This is a very tasty Indonesian fish dish called ikan pesmol. You can find candlenuts and turmeric root at Asian shops.

    Serves: 4 

    • 5 fillets mackerel, cut into large chunks
    • 1 teaspoon vinegar
    • 1/2 teaspoon salt
    • 2 teaspoons tumeric powder
    • 4 candlenuts, chopped finely
    • 4 onions, minced
    • 4 cloves garlic, minced
    • 1cm turmeric root, minced
    • 1cm ginger, minced
    • 2 red chilli or bird's eye chilli (julienned)
    • 4 bay leaves
    • 3 tablespoons coconut cream
    • 2 teaspoons salt
    • 1 tablespoon sugar
    • 1/4 cup water

    1. Season the fish with vinegar, 1/2 teaspoon salt and turmeric powder and fry in oil in a frypan until golden brown. Set fish aside in a bowl and keep warm.
    2. Mix the candlenuts, onions, garlic, turmeric root and ginger and saute in a little oil on low heat until fragrant.
    3. Add in the remaining ingredients and season according to taste then saute for another 5 minutes. Pour over fish and serve hot with rice and chilli sauce.
