Fried Noodles with Chicken, Prawns and Pipis

    This is a Thai-style noodle stir fry which is at its best with fresh noodles. You can add more chilli if you like.

    Serves: 4 

    • 3 tablespoons oil
    • 3 fresh red chillies, minced
    • 6 cloves garlic, minced
    • 250g boneless, skinless chicken breast, cut into strips
    • 400g fresh prawns, shelled and deveined
    • 400g pipis, steamed and removed from shell
    • 3 eggs, beaten
    • 1 tablespoon light soy sauce
    • 2 tablespoons dark soy sauce
    • 450g bean sprouts
    • 1 kg fresh flat rice noodles
    • salt and pepper to taste
    • 200g Chinese chives, cut into 3 cm lengths

    1. Heat oil in a wok and fry the minced chillies and garlic until fragrant.
    2. Add chicken and stir fry for 2 minutes. Add prawns and quickly stir fry for another 2 minutes before adding the pipis.
    3. Add the beaten eggs, making sure to stir quickly so that it doesn't become a hard scramble. Add the light soy sauce, dark soy sauce and bean sprouts.
    4. Add the noodles and mix thoroughly. Taste and add salt and pepper to taste. Stir fry for another 3 minutes and add the chives before turning off the heat.
