    This somewhat resembles a ceviche - it's the perfect elegant appetiser to start a dinner party. Green apple lifts the taste.

    Serves: 4 

    • 4 teaspoons caviar
    • 1/2 green apple
    • 100g lump crabmeat (fresh, not tinned)
    • 5 tablespoons mayonnaise
    • 1 teaspoon olive oil
    • 1/2 lime

    1. Peel apple and chop finely.
    2. Blanch and chop crabmeat. Add lime, olive oil and mayonnaise. Mix well and stir in apple.
    3. Transfer to serving glasses and top it with caviar. Refrigerate for at least 2-3 hours and served chilled.
