Peel and pip avocados and place in a mixing bowl. Crush fresh garlic and add to the bowl. Chop the onion into quarters and add to the bowl.
Add one cup sweet chilli sauce, one cup sour cream and Tabasco to taste. Chop tomato and add to the mix, then season to taste with salt and pepper. Add the juice from the lemon (this adds flavour and prevents the mix from browning).
Use a Bamix type mixer to blend to a smooth consistency. Pour into a presentation bowl, cover with gladwrap and refrigerate for at least an hour - can be left much longer.
Garnish with squiggles of sour cream, sweet chill sauce and sprinkles of finely chopped spring onions. Serve with corn chips
