Zucchini, Corn and Salsa Salad

    A great tasty tomato salad with a salsa dressing. You can use lime juice instead of lemon if you prefer.

    Serves: 6 

    • 2 large tomatoes, seeded and chopped
    • 1 small zucchini, diced
    • 175g corn kernels
    • 1/2 bunch spring onions, chopped
    • 1 avocado - peeled, stone removed and diced
    • 5 tablespoons salsa
    • 2 tablespoons olive oil
    • 2 tablespoons lemon juice
    • 1/4 teaspoon ground cumin

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. In a large bowl, combine the vegetables.
    2. Whisk together the salsa, oil, lemon juice and cumin. Toss gently with the vegetables and serve.
