This is a twist on the traditional caramel slice..My husband loves caramel slice and I find this is a quicker way to make it and easy to make bulk amounts.This recipe makes a slice roughly 25cm x 35cm but measurements can be halved. Stored in the fridge this will last a week (if there is any left after first day :) )

Makes: 20 large pieces

  • 2x 375g Tin Condensed Milk
  • 2x packets Arrow Root Biscuits
  • 1/2 cup firmly packed Brown sugar
  • 1/2 cup Fine Desiccated Coconut
  • 150g Butter or Marg
  • 200g Good quality cooking chocolate

  1. Place the biscuits in a food processor to turn into fine crumbs. Then place in a large bowl with the coconut. Line a large deep oven tray with baking paper, I use a 2cm x 35cm one.
  2. In a saucepan combine the butter condensed milk and brown sugar and heat over a medium heat, stirring all the time, till sugar and butter dissolves and mixture darkens slightly. About 10mins.
  3. Pour the caramel mixture into the bowl with the biscuit crumbs and mix to combine. Spoon evenly into the prepared tray and press down firmly to bond it together.
  4. Lastly melt cooking chocolate in a saucepan over a low heat when smooth pour over top of slice and use a knife to smooth chocolate over the top.

Make it healthier

Use reduced fat condensed milk and a low fat margarine to lower the calories.
