Potato Salad with Sour Cream

    This is a great potato salad to make as a side for dinner or a BBQ. It is creamy and rich with the freshness of celery and dill.

    Serves: 4 

    • 4 large potatoes, diced
    • 2 teaspoons capers
    • 3 stalks celery, sliced
    • 1 tablespoon dill, finely chopped
    • 1 tablespoon sour cream
    • 1 teaspoon Dijon mustard
    • juice of 1/2 lemon

    1. Dice potatoes into 2cm pieces. Cook thoroughly but make sure they are still a little firm so they don't break apart too much in the salad. Allow to cool.
    2. In a large bowl, mix together the potatoes, capers, celery and dill.
    3. To make the dressing, mix the sour cream, Dijon mustard and lemon juice.
    4. Stir the dressing through the salad and serve.

    This potato salad is creamy and delicious. You can make it slightly healthier by using light yoghurt in place of sour cream.  -  17 May 2012
