Coriander Shredded Chicken

    The coriander chicken is slow cooked in salsa, taco mix, lime juice and coriander. It makes great chicken tacos, enchiladas or roll it up in tortillas for burritos.

    Serves: 6 

    • 500g salsa
    • 35g taco seasoning mix
    • 1 lime, juiced
    • 3 tablespoons fresh coriander, chopped
    • 1 1/2 kg chicken breast halves, skinless and boneless

    1. Place the salsa, taco seasoning, lime juice and coriander into a slow cooker then stir to combine. Add the chicken breasts then stir to coat with the salsa mixture. Cover the cooker, set to High then cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve.

    I used a good quality salsa, double-batch of homemade taco seasoning and double the cilantro. I made the end result into fajitas with sauteed red pepper, sweet onion and minced garlic. As always, I think the quality of your ingredients can make or break your recipe--I'm glad I doubled the spices and used a good salsa.     Yum! Really, really good. Instead of taco seasoning mix I just threw in some spices: cumin, ancho chile powder, sea salt, black/white pepper, oregano, etc. The cilantro gives it such a fresh flavor; if you like cilantro, you'll like this dish. I served it in whole wheat flour tortillas with shredded cabbage, shredded cheese, plain yogurt, and fresh cilantro. I'll definitely make again.
