Quinoa Veggie Burgers

    These veggie burgers are made from black beans, quinoa, breadcrumbs, capsicum, onion, garlic, cumin, egg and a splash of Tabasco to taste. Pop on a bun and serve.

    • 1 (400g) tin black beans, rinsed and drained
    • 1/4 cup quinoa
    • 1/2 cup water
    • 1/2 cup breadcrumbs
    • 1/4 cup yellow capsicum, minced
    • 2 tablespoons onion, minced
    • 1 large clove garlic, minced
    • 1 1/2 teaspoons ground cumin
    • 1/2 teaspoon salt
    • 1 teaspoon Tabasco sauce, to taste
    • 1 egg
    • 1/4 cup olive oil

    1. Bring the quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover then simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes.
    2. Roughly mash the black beans with a fork leaving some whole black beans in a paste-like mixture. Mix the quinoa, bread crumbs, capsicum, onion, garlic, cumin, salt, Tabasco and egg into the black beans using your hands.
    3. Form the black bean mixture into 5 patties. Heat the olive oil in a large frying pan. Cook the patties in the hot oil until heated through, 2-3 minutes per side.

    You can find tinned black beans in the organic section of the supermarket, in a health food shop or if you prefer, you can buy them dry at places like bin inn and soak them overnight.

    i really enjoyed these i made a few adjustments i used green capsicum and added some Moroccan spice to the mixture and i also replaced the Tabasco for sweet chilli was so good i didn't have any problems with them falling apart i did however add more bread crumbs only because i thought the mixture was to runny but that is probably due to the sweet chilli sauce. thank you for sharing i will be definitely saving this recipe making them again.  -  15 Sep 2016


    The flavour of these were to die for, but they didn't hold together well. Maybe I'll add an extra egg next time? Delish  -  23 Aug 2014


    This is the best vegetarian burger I've ever made! When I cook with quinoa, I usually use 1 part Quinoa to 2 parts water, so I double-checked the website where this recipe originated. It calls for 3/4 cup cooked quinoa, so you might want to adjust your recipe accordingly. Definitely worth a try!  -  25 Mar 2012  (Review from Allrecipes USA and Canada)
