Bring the quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover then simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes.
Roughly mash the black beans with a fork leaving some whole black beans in a paste-like mixture. Mix the quinoa, bread crumbs, capsicum, onion, garlic, cumin, salt, Tabasco and egg into the black beans using your hands.
Form the black bean mixture into 5 patties. Heat the olive oil in a large frying pan. Cook the patties in the hot oil until heated through, 2-3 minutes per side.
You can find tinned black beans in the organic section of the supermarket, in a health food shop or if you prefer, you can buy them dry at places like bin inn and soak them overnight.
i really enjoyed these i made a few adjustments i used green capsicum and added some Moroccan spice to the mixture and i also replaced the Tabasco for sweet chilli was so good i didn't have any problems with them falling apart i did however add more bread crumbs only because i thought the mixture was to runny but that is probably due to the sweet chilli sauce. thank you for sharing i will be definitely saving this recipe making them again. - 15 Sep 2016
