Homemade Caesar Salad Dressing

    This Caesar style salad dressing is a mixture of mayonnaise, olive oil, Parmesan, blue cheese, vinegar, garlic, lemon juice, mustard, Tabasco and Worcestershire.

    Serves: 8 

    • 1/2 cup mayonnaise
    • 1/4 cup extra virgin olive oil
    • 1/4 cup Parmesan cheese, grated
    • 2 tablespoons blue cheese, crumbled
    • 1 tablespoon red wine vinegar
    • 3 cloves garlic, minced
    • 1 teaspoon lemon juice
    • 1/2 teaspoon dry mustard
    • 4 dashes Worcestershire sauce
    • 2 dashes Tabasco sauce
    • 1 pinch cayenne pepper
    • 1 pinch salt and pepper, to taste

    1. Whisk together the mayonnaise, olive oil, Parmesan cheese, blue cheese, vinegar, garlic, lemon juice, dry mustard, Worcestershire sauce, Tabasco sauce, cayenne pepper and salt and pepper in a bowl until well blended. Cover and refrigerate for 4 hours before serving.


    Serve over a bed of your favourite lettuce. For extra presentation serve with croutons, cubes of avocado and grated Parmesan cheese. Leftover dressing makes good dip for chippies or even fresh veggies.

    I did not add the prepared blue cheese dressing only because I don't normally have that kind of dressing on hand. I did up the fresh parmesan to 1/4 cup and I also used reduced fat mayonnaise. I made no other changes. This dressing was just enough to cover my Macaroni Caesar Salad without drowning it in dressing and the flavor was wonderful. Very, very good.
