Coconut Peanut Chicken

    By cooking these chicken thighs in the slow cooker with peanut butter, coconut milk, soy sauce, lime juice, ginger and salsa, you get a tender Thai inspired meal.

    Serves: 4 

    • 3/4 cup hot salsa
    • 1/4 cup crunchy peanut butter
    • 3/4 cup lite coconut milk
    • 2 tablespoons lime juice
    • 1 tablespoon soy sauce
    • 1 teaspoon white sugar
    • 2 tablespoons fresh ginger, grated
    • 1kg chicken thighs, skinnless
    • 1/2 cup peanuts, chopped, for topping
    • 2 tablespoons coriander, chopped, for topping

    1. Combine the salsa, peanut butter, coconut milk, lime juice, soy sauce, sugar and ginger in a slow cooker; mix well. Place the chicken in the sauce, spoon mixture over chicken to coat.
    2. Place the lid on the cooker and set to LOW. Cook until chicken is very tender and sauce has thickened, 8 to 9 hours. Garnish with peanuts and coriander before serving.

    Why to use thighs

    You'll never guess this is made with chicken thighs! They really taste better than using breast meat which dries out in the slow cooker - and thighs are more economical.


    The strength of the hot salsa dissipates when cooked, so this dish is not too spicy. You may even want to serve Tabasco or peri peri sauce as an accompaniment. If you don't have crunchy peanut butter, use regular peanut butter.

    Made this tonight and it was delicious! I didn't have salsa, so put in some sweet chilli sauce instead of salsa and sugar.  -  28 May 2013

    Had this on a rainy kids sports practice night. Was lovely to come home to! Sauce was not quite sweet enough for us so I added an extra teaspoon of sugar to sauce at the end. Kids loved it, makes it a winner in my book!  -  09 May 2016
