Slow Cooker Sweet and Sour Pork

    By slow cooking these pork chops with brown sugar, tomato sauce, onion and lemon juice, you get the most tender pork in a sweet and sour sauce. Serve with rice.

    Serves: 4 

    • 4 pork chops
    • 1/4 cup brown sugar
    • 1/4 cup tomato sauce
    • 2 tablespoons onion, minced
    • 1 tablespoon lemon juice

    1. Heat a large frying pan over high heat. Sear the pork chops until browned, 1 to 2 minutes per side. Transfer the pork chops to a slow cooker. Mix the brown sugar, tomato sauce, onion and lemon juice in a bowl; spoon over the pork chops.
    2. Cook on Low until the pork chops are very tender, 4 to 6 hours.

    Short Cut

    For quicker cooking, you can also bake them in the oven for 30 minutes at 180 degrees C.

    Nice flavor and very easy. I used more chopped onions, added fresh pressed garlic, added a "glob of peach preserves, substituted apple cider vinegar for the lemon, and added bell pepper chunks and sliced canned pineapple (both near the end). I thickened the sauce to use as gravy over rice. Next time I will cut the onions in big chunks and add red food coloring for a more traditional looking dish. I love the ease of using a crock pot.
