    This super fast and easy side dish is just asparagus, lemon juice, salt, pepper and Parmesan cheese, sautéed in a wee bit of oil then served. Yummy veggie side.

    Ingredients
    Serves: 4 

    • 2 tablespoons olive oil
    • 230g fresh asparagus
    • 1/4 cup lemon juice
    • 1 pinch salt and ground black pepper, to taste
    • 1/4 cup Parmesan cheese, finely grated

    Directions
    Preparation:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Heat the olive oil in a large frying pan over medium-high heat. Cook and stir the asparagus in the hot oil until tender, about 5 minutes. Pour in the lemon juice then season to taste with salt and pepper. Place the asparagus into a serving dish then sprinkle with Parmesan cheese to serve.

    In a nutshell, this is way too much lemon and Parmesan for the amount of asparagus called for. With this amount of Parmesan you sure wouldn't need any salt! I prepared this using all ingredients to taste - very good, but easier just to roast it at 425 degrees for about 12 minutes - no muss, no fuss and delicious. I would suggest merely a drizzle of lemon juice and a sprinkle of Parmesan. Less is more.  -  06 Jul 2011  (Review from Allrecipes USA and Canada)
