Hokey Pokey biscuits are a New Zealand favourite. This is a classic New Zealand recipe.

Cattleya Canterbury, New Zealand

Makes: 12 bisucits

  • 125g butter
  • 50g sugar
  • 1 dessertspoon milk
  • 1 teaspoon bicarb soda
  • 1 1/2 cups plain flour
  • 1 dessertspoon golden syrup

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Cream butter and sugar. In a medium bowl, warm milk and golden syrup then add the bicarb soda. Pour mixture into butter and sugar then add flour.
  2. Roll into balls and put on a greased baking tray. Press down with a fork.
  3. Bake at 180 degrees C for 15-20 minutes. Allow to cool on wire rack.

A friend made these last week, they were very moreish. I'm making them this weekend but will add a little mixed spice or a twist of finely ground black pepper to add a bit of bite - 12 Aug 2013


After having always made the Edmond's recipe and never had a failure I was surprised how different these biscuits are... the chemical reaction didnt happen the way it should have, despite warming the milk, and I ended up with a crumbly mixture even though I weighed and measured accurately. The resulting biscuits are pale, too delicate and nothing like the photo provided. I will stick to the conventional method of making the hokey pokey on a stove top from now on to get that rich dark colour and flavour. - 03 May 2014
