Roasted Sweet Potato Salad with Fetta

    This salad is so hearty it can be served as a light main. It has a really nice combination of roasted sweet potato, rocket, roasted red capsicum, olives and fetta. Dress with balsamic vinegar and olive oil.

    Serves: 4 

    • 1 large golden sweet potato
    • 100g rocket
    • 50g roasted red capsicum
    • 12 Kalamata olives, halved
    • 50g fetta, crumbled
    • balsamic vinegar
    • olive oil

    Preparation:15min  ›  Cook:45min  ›  Extra time:20min cooling  ›  Ready in:1hour20min 

    1. Preheat oven to 200 degrees C.
    2. Chop the sweet potato into 1cm pieces. Place on a tray greased with olive oil and bake in the oven for 45 minutes. Allow to cool for about 20 minutes but it is okay if it is still slightly warm in the salad.
    3. In a large bowl, toss together the rocket, sweet potato, red capsicum, olives and fetta.
    4. Dress with olive oil and balsamic vinegar. Serve.

    This recipe is just as nice with red sweet potato. It also works well with pumpkin. It is nice for a light but filling lunch.  -  13 May 2012


    Loved this recipe. I made a slight change. I swapped some quantities. I added 50g of rocket and 100g of fetta.  -  24 Apr 2016
