This salad is so hearty it can be served as a light main. It has a really nice combination of roasted sweet potato, rocket, roasted red capsicum, olives and fetta. Dress with balsamic vinegar and olive oil.
Chop the sweet potato into 1cm pieces. Place on a tray greased with olive oil and bake in the oven for 45 minutes. Allow to cool for about 20 minutes but it is okay if it is still slightly warm in the salad.
In a large bowl, toss together the rocket, sweet potato, red capsicum, olives and fetta.
