These fritters have zucchini, corn and red onion. They are easy to make and are a great way to add vegetables to meals for children. They are also great served with sour cream.

In a bowl, place the grated zucchini and 1 teaspoon salt. Allow to sit for 5 minutes. This is to draw some of the liquid from the zucchini. Place the zucchini in a colander and squeeze out moisture.
In a large bowl, place the beaten egg. Add the zucchini, onion, corn and flour. Season with salt and pepper. Mix well.
In a frypan on medium-high heat, put enough oil in the pan for shallow frying. Place a tablespoon of the mixture in the pan for each fritter.
Fry for a few minutes on each side until golden brown.
Drain on paper towel and serve immediately.
Tip
I used safflower oil for shallow frying but you can use any high-heat oil.
