Zucchini Fritters with Corn

    These fritters have zucchini, corn and red onion. They are easy to make and are a great way to add vegetables to meals for children. They are also great served with sour cream.

    Serves: 4 

    • 2 large zucchinis, grated
    • 1 teaspoon salt
    • 1 large egg, beaten
    • 1 small red onion, chopped finely
    • 1/2 cup corn, cooked
    • 1/2 (60g) cup flour
    • salt and pepper to taste
    • safflower oil for shallow frying

    1. In a bowl, place the grated zucchini and 1 teaspoon salt. Allow to sit for 5 minutes. This is to draw some of the liquid from the zucchini. Place the zucchini in a colander and squeeze out moisture.
    2. In a large bowl, place the beaten egg. Add the zucchini, onion, corn and flour. Season with salt and pepper. Mix well.
    3. In a frypan on medium-high heat, put enough oil in the pan for shallow frying. Place a tablespoon of the mixture in the pan for each fritter.
    4. Fry for a few minutes on each side until golden brown.
    5. Drain on paper towel and serve immediately.


    I used safflower oil for shallow frying but you can use any high-heat oil.
