Apple and Broccoli Stalk Salad

    This fresh, sweet salad combines delicious autumn flavours and crunchy textures. This is a great way to use up leftover broccoli stalks after making my vegan broccoli and vegetable soup.

    Serves: 2 

    • 3 raw broccoli stalks, cut into thin strips (julienne style)
    • 1 medium carrot, cut into thin strips (julienne style)
    • 2 medium apples, chopped
    • 1/4 cup sultanas
    • 1/4 cup chopped walnuts
    • 1/3 cup your favourite salad dressing

    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Combine all the ingredients in a medium bowl. Gently toss using two spoons. Spoon onto a plate and serve!


    If you like cuper cold salads, you can chill this salad for up to an hour before serving.

    This salad is a great way to use up broccoli stalks and is very fast to make. It also looks really appealing. I made it with italian dressing and it was delicious.  -  13 May 2012
