This easy Boston bun recipe uses a mashed potato and sweet sultanas for delicious flavour and texture.

Serves: 16 

  • 1 cup potato, mashed
  • 3/4 cup (170g) white sugar
  • 1 cup (160g) sultanas
  • 1 cup (250ml) milk
  • 2 cups (250g) self raising flour
  • Icing
  • 2 cups (310g) icing sugar
  • 60g butter
  • 1 1/2 tablespoon milk, warm
  • 2 drops red food colouring
  • 1/2 cup desiccated coconut

Preparation:20min  ›  Cook:25min  ›  Ready in:45min 

  1. Preheat oven to 180 degrees C. Beat potato and sugar. Add sultanas, milk and flour and mix.
  2. Pour into greased round 22cm tins. Bake for 20-25 minutes. Cool.
  3. Cream butter, icing sugar and milk. Add food colouring until icing is a light pink. Spread it over cooled buns and cover with coconut.
