This easy Boston bun recipe uses a mashed potato and sweet sultanas for delicious flavour and texture.
1 cup potato, mashed
3/4 cup (170g) white sugar
1 cup (160g) sultanas
1 cup (250ml) milk
2 cups (250g) self raising flour
2 cups (310g) icing sugar
1 1/2 tablespoon milk, warm
2 drops red food colouring
1/2 cup desiccated coconut
- Preheat oven to 180 degrees C. Beat potato and sugar. Add sultanas, milk and flour and mix.
- Pour into greased round 22cm tins. Bake for 20-25 minutes. Cool.
- Cream butter, icing sugar and milk. Add food colouring until icing is a light pink. Spread it over cooled buns and cover with coconut.
