This is NOT SOURDOUGH because it has instant yeast in it.  -  22 Dec 2011

Hi all - having made bread over the years (with yeast) I have just begun to dabble with sourdough recipes. My understanding was that sourdough bread relies on the starter only for its rising properties, and not commercial yeast. I note this recipe has both starter and added yeast, so was wondering if someone could clarify for me? Thanks.  -  17 Nov 2008

It worked! However, every starter is different and you need a bit of breadmaking experience to judge whether your starter is too acidic/sour (then it needs either flour feeding and/or soda to neutralise) or whether it is frothy or too flat (then it needs added yeast to help out) and check to see if your dough is smooth just before rising or needs a few drops more water or a few shakes more water to make a stiff dough.  -  14 Jul 2008
