Mediterranean Pizza with Haloumi

    This is a quick meal to make, especially if you use a pre-made pizza base. The haloumi makes this really tasty. Serve with a green salad.

    Serves: 4 

    • 100g haloumi
    • 1 pre-made pizza base
    • 80g tomato paste
    • 1 clove garlic, sliced finely
    • 100g cheddar cheese, grated
    • 1/2 red onion, chopped finely
    • 1 green capsicum, diced
    • 180g bottled artichokes, chopped
    • 1/2 teaspoon dried oregano

    1. Preheat oven to 200 degrees C.
    2. Slice the haloumi into 1/2 cm thick pieces and cook in a frypan over medium heat until golden brown on both sides. Leave to cool.
    3. Place pizza base on baking tray. Spread the tomato paste on the base. Arrange the garlic on top.
    4. Next, sprinkle the cheddar cheese evenly on the base.
    5. Cut the haloumi into small pieces.
    6. Spread the onion, capsicum, artichokes and haloumi pieces over the pizza.
    7. Sprinkle oregano on top.
    8. Bake for 30 minutes or until the cheese is golden and the base is crispy.

    I like to make this on a busy weeknight or for a quick lunch. The artichokes and haloumi make an interesting and tasty pizza.  -  10 May 2012
