These pipi fritters are a yummy New Zealand plate. They can be eaten for breakfast, lunch or dinner.

Makes: 12 fritters

  • 2 cups pipis, coarsely chopped
  • 2 eggs, whisked
  • 3 tablespoons flour
  • 2 teaspoons baking powder
  • 1/4 red onion, finely diced
  • 2 mint leaves, finely sliced
  • 1/2 tablespoon lemon rind, grated
  • chilli powder, to taste
  • salt and pepper, to taste
  • beer, to bind

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Whisk 2 eggs. Add pepper and salt, grated lemon rind, pinch of chilli powder and a couple of finely sliced fresh mint leaves. Mix in 3 tablespoons of flour and 2 teaspoons of baking powder.
  2. Add the pipis and the diced red onion. Slowly add beer while mixing to bind until desired consistency is reached.
  3. Scoop out in tablespoons and shape into fritters. Fry over medium heat in butter until pipis are cooked.


If collect your own pipis, leave them to soak overnight in salt water so they can spit out any sand.


Pipi is a New Zealand shell fish, can be known as surf clam. You can substitute any other shellfish.
