Spicy Whoopie Pies

    These are wheat and oat based whoopie cake that are filled with lots of flavoursome spices like cinnamon, nutmeg and cloves.

    Makes: 18 whoopie pies

    • 2 cups brown sugar
    • 3/4 cup butter
    • 2 eggs
    • 1/2 teaspoon salt
    • 1 teaspoon cinnamon
    • 1/2 teaspoon nutmeg
    • 1/2 teaspoon ground cloves
    • 1/2 teaspoon allspice
    • 1/2 teaspoon ground ginger
    • 2 1/2 cups SR plain flour
    • 1 cups quick cooking oats
    • Filling
    • 1 egg white
    • 2 tablespoons milk
    • 1 teaspoon vanilla
    • 2 cups icing sugar
    • 3/4 cups butter

    1. Preheat oven to 180 degrees C. Lightly grease baking trays, or line with baking paper.
    2. Cream butter with the brown sugar until light and fluffy. Beat in the eggs and mix well. Stir in the salt, cinnamon, nutmeg, cloves, allspice, ginger and flour. Mix to combine. Stir in the oats.
    3. Drop cake mixture onto the prepared baking sheets. Bake for 10 to 12 minutes. Let cakes cool before filling.
    4. Filling: Beat egg white. Mix in the milk, vanilla and 1 cup icing sugar. Beat in the butter and remaining cup of icing sugar. Beat until light.

    Tip on sizing

    Use an icecream scoop when dropping the cake mixture onto the trays, to achieve same-size results.
