Chocolate Whoopie Pies

    These are just like mini-cakes, that are the perfect serving size for afternoon teas, or the special treat to share with friends and family. The filling is a thick, marshmallow-style frosting - but if you'd like to make it a little creamier and thinner, add a little more milk. The photo shows the whoopie pie with a little chocolate drizzled over the top for extra jazz!

    Makes: 12 Whoopie Pies

    • Cake
    • 205g softened butter
    • 400g white sugar
    • 500g plain flour
    • 1 teaspoon salt
    • 1 cup hot water
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 85g cocoa powder
    • 1 cup sour milk
    • 3 teaspoons baking soda
    • Filling
    • 2 egg whites
    • 1 tablespoon vanilla extract
    • 3 cups icing sugar
    • 4 tablespoons plain flour
    • 4 tablespoons (60ml) milk
    • 255g softened butter

    1. Preheat oven to 180 degrees C. Line baking trays with baking paper.
    2. Cakes Cream together butter, sugar, eggs and vanilla. Sift togetheer flour, cocoa and salt. Alternatively add flour mixture and sour milk to butter mix. Add baking soda to hot water and stir into cake mix.
    3. Drop spoons of cake mix onto baking trays. Bake for 7-10 minutes. Allow them to cool on the trays, before transferring onto cooling racks.
    4. Filling Cream together all ingredients. Beat until light and fluffy.
    5. Spread filling mix between cooled cakes.


    To sour the milk, mix in one tablespoon of lemon juice or white vinegar to one cup of milk.
